Pork Loin Braised with Guava


2 tablespoons olive oil
2 pounds boneless pork loin roast
1 3/4 cups (14.5–ounce can) recipe–ready diced tomatoes, undrained
1 1/4 cups (1 medium) chopped onion
2 cloves garlic, finely chopped
1 bay leaf
1 1/2 cups (11.5 fluid–ounce can) Guava Kern's Nectar
1 teaspoon Chicken Bouillon
1 teaspoon ground white pepper

HEAT olive oil in large stockpot over medium heat. Add pork; lightly brown. Remove from pot.

COMBINE tomatoes with juice, onion, garlic and bay leaf in same pot. Cook for 2 minutes, stirring frequently and scraping brown bits from bottom of pot. Stir in nectar, bouillon and pepper; bring to a boil. Return pork to pot; cover. Reduce heat to low; cook, turning pork over once, for about 60 minutes or until pork is tender.

PLACE pork on a serving platter; pour 1/2 cup sauce over pork. Serve with remaining sauce.
Makes 6 servings.
